2019 Nine Oaks Khikhvi, Kakheti, GeorgiaABOUT THIS WINE The 2019 Nine Oaks Khikhvi is a rare and characterful dry amber wine produced entirely from the native Khikhvi grapea variety with less than 1,000 hectares planted across Georgia. The grapes are handharvested, destemmed, and fermented spontaneously with wild yeasts at a controlled temperature (around 22 C), undergoing an extended 28day skin maceration in large Qvevri (4000 L clay amphorae), followed by lees aging and careful racking

and cool wild ferment followed by 6 months on lees in stainless steel vats

This wine is handcrafted at every stage of its elaboration and reveals a remarkable complexity and a golden color reminiscent of the sun

It spends 16 months in bottle before release

structured wine yet with an aromatic complexity and finesse of tannin that usually reserved for wines at a much greater price
