2018 Domaine de l'Ecu "Mephisto", Loire Valley, FranceABOUT THIS WINE Cabernet Franc planted in a parcel dominated by granite. The estate is biodynamically farmed, soils are worked, leaf pulling is done manually and all fruit is harvested by hand. At harvest, all fruit is received in the winery via gravity (no pumps). Destemmed, a 12 day skin soak, and all indigenous yeast fermentation. The wine is then aged in a combination of amphora and old barrels for 15 months. Zero sulfur added. ABOUT THIS PRODUCER
